1. Flavour
  • umami The signature of high grade matcha. A savoury taste.
  • sweet A gentle sweetness, like fresh peas which balances out bitterness.
  • bitter A sharp edge on the tongue, similar to dark chocolate or espresso. In good matcha, bitterness is balanced, giving strength without overwhelming the other notes.

    2. Notes

  • floral A delicate, perfumed hint in the background, like orchids or jasmine tea. Soft and refined.
  • vegetal Grassy. Reminiscent of spinach, kale or fresh cut grass, earthy and green.
  • oceanic A salty-sweet freshness, like nori or sea breeze.
